  • 2 strips Bacon, Cooked/crumbled
  • 1 whole Onion, Chopped
  • 1/2 cups Butter
  • 3 pounds Butternut Squash, Sliced
  • 3 cups Chicken Stock
  • 2 teaspoons Salt
  • 3 cups Half-and-Half Or Milk
  • 1 bunch Fresh Chives, Chopped

Directions

    Saute onion in butter or bacon grease.

    Add squash, stock and salt, cooking until squash is tender.

    Add half and half, cooking over low.

    Puree with immersion blender until smooth.

    Serve with fresh chives and bacon pieces.
