- 1 whole Onion, Chopped
- 1/2 cups Butter
- 3 pounds Butternut Squash, Sliced
- 3 cups Chicken Stock
- 2 teaspoons Salt
- 3 cups Half-and-Half Or Milk
- 1 bunch Fresh Chives, Chopped
Directions

1Saute onion in butter or bacon grease.

2Add squash, stock and salt, cooking until squash is tender.

3Add half and half, cooking over low.

4Puree with immersion blender until smooth.

5Serve with fresh chives and bacon pieces.
