- 1 1 onion
- 1 butternut squash
- 2 carrots
- 1 piece ginger
- 6 cups chicken broth
- 3 tablespoons brown sugar
- 1/2 teaspoon nutmeg
- 1 1/2 teaspoons salt
- 3/4 teaspoons cayenne pepper
Directions

1Dice onion, carrot; peel, seed, chop squash; peel, mince ginger. saute all vegetables in olive oil in large soup kettle.

2Add stock, sugar, nutmeg, salt & pepper to taste. Simmer about 2 hours
