  • 3 tablespoons olive oil, extra virgin
  • 1 1 onion
  • 1 butternut squash
  • 2 carrots
  • 1 piece ginger
  • 6 cups chicken broth
  • 3 tablespoons brown sugar
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoons salt
  • 3/4 teaspoons cayenne pepper

Directions

    Dice onion, carrot; peel, seed, chop squash; peel, mince ginger. saute all vegetables in olive oil in large soup kettle.

    Add stock, sugar, nutmeg, salt & pepper to taste. Simmer about 2 hours
