Squash Casserole

- 3 lb. yellow squash
- 3 carrots
- 2 large onions
- salt and pepper to taste
- 2 cans cream of chicken soup, undiluted
- 1 (8 oz.) carton sour cream
- 1 small pimento, chopped
- 1 (8 oz.) pkg. seasoned stuffing mix
Directions

1Cook squash, carrots and onion in small amount of water.

2Mash well. Add salt, pepper, sour cream, soup and pimento.

3Grease casserole dish with butter and line with stuffing mix.

4Pour mixture in and put rest of stuffing on top. Bake at 350° for 45 minutes.
