- 1 lb. yellow squash
- 1 medium onion
- 2 c. grated Cheddar cheese
- 14 saltine crackers, crumbled
- 1/2 c. milk
- 2 eggs
- salt and pepper to taste
Directions

1Slice squash and chop onion.

2Boil together until tender. Drain off water and mash.

3Add cracker crumbs and eggs and mix well.

4Add milk and cheese (save enough cheese to sprinkle on top). Add salt and pepper.

5Pour into buttered casserole dish and bake at 350° for 30 to 45 minutes.
