Squash Casserole

  • 2 lb. yellow summer squash, sliced
  • 1 tsp. salt
  • 1/8 tsp. sugar
  • 1 c. water
  • 1/4 c. butter or margarine
  • 1 c. sour cream
  • 1 c. sharp Cheddar cheese, cubed
  • 1/4 tsp. pepper
  • 1 c. soft bread crumbs, buttered

Directions

    Add squash, salt and sugar to water in saucepan; cook for 20 minutes or until tender, then drain in a colander.

    Return squash to saucepan, add butter and mash with a potato masher.

    Blend in sour cream, cheese and pepper.

    Turn into baking dish, top with crumbs.

    Bake in a 350° oven for 20 minutes or until bubbly and crumbs are browned.
