Squash Casserole

  • 6 medium yellow squash or 3 zucchini
  • 2 eggs
  • 1 medium onion, chopped
  • 1 stick margarine
  • 1 can cream of chicken soup
  • 4 slices American cheese
  • 1 c. herb stuffing mix
  • 1 (8 oz.) carton sour cream (optional)
  • 1 (2 oz.) jar diced pimento (optional)
  • 1/4 tsp. oregano

Directions

    Cook squash in small amount of water until tender; drain well and mash.

    Combine soup, sour cream, oregano, pimento, onion and butter.

    Blend well; add squash, stirring gently.

    Lightly grease 2-quart casserole dish.

    Alternate squash mixture and cheese (cut into strips).

    Bake at 350° for 30 minutes or until lightly brown.
