- 6 medium yellow squash or 3 zucchini
- 2 eggs
- 1 medium onion, chopped
- 1 stick margarine
- 1 can cream of chicken soup
- 4 slices American cheese
- 1 c. herb stuffing mix
- 1 (8 oz.) carton sour cream (optional)
- 1 (2 oz.) jar diced pimento (optional)
- 1/4 tsp. oregano
Directions

1Cook squash in small amount of water until tender; drain well and mash.

2Combine soup, sour cream, oregano, pimento, onion and butter.

3Blend well; add squash, stirring gently.

4Lightly grease 2-quart casserole dish.

5Alternate squash mixture and cheese (cut into strips).

6Bake at 350° for 30 minutes or until lightly brown.
