Squash Casserole

  • 1 qt. sliced yellow squash
  • 1 small onion, chopped
  • 1 Tbsp. butter
  • pepper
  • poultry seasoning
  • slivered almonds
  • Ritz cracker crumbs
  • 1 can mushroom soup
  • 1/2 c. milk
  • 1/2 to 1 c. shredded Cheddar cheese

Directions

    Stew squash and onion in salted water until tender.

    Drain, mash and add butter and a dash of black pepper.

    Pour one-half of mixture into buttered baking dish.

    Cover with cracker crumbs. Sprinkle with poultry seasoning and slivered almonds.

    Repeat layers.

    Dilute mushroom soup with milk and pour over top. Sprinkle with Cheddar cheese and place in medium oven until cheese is lightly browned.
