Squash Casserole

Ingredients

  • 2 to 2 1/2 c. cooked, drained yellow or green squash
  • 1 large onion (may be cooked with squash)
  • 1 stick margarine
  • 1 c. warm cottage cheese
  • 1 roll round cheese flavored crackers, crushed (save some for topping)
  • salt and pepper to taste

Directions

    Mash squash.

    Blend all ingredients well.

    Pour into greased casserole dish.

    Top with more crushed crackers blended with melted butter.

    Bake at 350° for 30 minutes or until crackers are brown.
