- 2 medium zucchini or summer squash, cubed
- 2 carrots, shredded or chopped
- 1 or 2 onions
- 8 oz. sour cream
- 1/2 box croutons
- 1 can cream of mushroom soup
Directions

1Parboil squash and carrots.

2Saute onions in the butter. Drain squash and carrots.

3Combine all ingredients in casserole. Bake at 350° for 30 minutes.
