  • 2 medium zucchini or summer squash, cubed
  • 2 carrots, shredded or chopped
  • 1 or 2 onions
  • 8 oz. sour cream
  • 1/2 box croutons
  • 1 can cream of mushroom soup

    Parboil squash and carrots.

    Saute onions in the butter. Drain squash and carrots.

    Combine all ingredients in casserole. Bake at 350° for 30 minutes.
