- 1 or 2 kinds squash (I use zucchini and yellow squash)
- margarine
- green pepper
- onion
- tomatoes (fresh, skinned or canned)
- rice
- salt and pepper to taste
Directions

1Melt 1 stick of margarine in casserole dish or pan.

2Add squash, cut in chunks, diced pepper and onion.

3(May use 1 or 2 peppers and 1 large onion.)

4Add tomatoes and 1/2 to 1 cup rice, according to size of casserole.

5Remember, rice swells and absorbs the liquid.

6Add salt and pepper to taste.
