- 2 lb. yellow squash or 3 cans squash
- 1 c. cream of mushroom soup
- 1 medium onion, chopped
- salt and pepper to taste
- 1 stick butter
- 1 c. (8 oz.) sour cream
- 1 pkg. herb stuffing
- 1 jar pimento
Directions

1Cook sliced squash, onion, salt and pepper until tender.

2Brown stuffing in butter.

3Oil a 2 1/2-quart baking dish with 1/2 of stuffing.

4Drain squash and add cream of mushroom soup.

5Stir well and layer over stuffing in baking dish.

6Put sliced pimento on top. Add sour cream as next layer.

7Top dish with remainder of stuffing. Bake uncovered at 350° for 30 to 40 minutes.

8Serves 8.
