Squash Casserole

Ingredients

  • 2 lb. yellow squash or 3 cans squash
  • 1 c. cream of mushroom soup
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 1 stick butter
  • 1 c. (8 oz.) sour cream
  • 1 pkg. herb stuffing
  • 1 jar pimento

Directions

    Cook sliced squash, onion, salt and pepper until tender.

    Brown stuffing in butter.

    Oil a 2 1/2-quart baking dish with 1/2 of stuffing.

    Drain squash and add cream of mushroom soup.

    Stir well and layer over stuffing in baking dish.

    Put sliced pimento on top. Add sour cream as next layer.

    Top dish with remainder of stuffing. Bake uncovered at 350° for 30 to 40 minutes.
