Squash Casserole

Ingredients

  • 2 to 3 lb. cooked squash
  • 1 chopped green pepper
  • 1 chopped onion
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 small can green chilies, chopped (optional)
  • 1 box Stove Top stuffing mix (chicken flavor)
  • 1 stick oleo
  • 8 oz. grated Cheddar cheese

Directions

    Melt oleo and pour over stuffing mix and seasoning.

    Let set. Cook squash, drain and mash.

    Add other vegetables, soup and sour cream.

    Add half of cheese and half of stuffing mix to vegetable mixture.

    Pour into greased casserole and top with remaining stuffing mix and remaining cheese.

    Bake at 350° for 30 minutes.
