- 2 lb. yellow squash
- 2 eggs, beaten
- 1 medium onion, chopped fine
- 3 Tbsp. butter
- buttered bread crumbs
- salt and pepper
- 3/4 c. grated cheese (optional)
- crumbled crisp bacon (optional)
Directions

1Cook squash.

2Pour off liquid and mash with back of a fork. Saute onion in butter.

3Combine squash, onion, eggs, salt and pepper.

4Sprinkle with buttered bread crumbs. Bake uncovered 30 minutes at 375°.

5Use a small casserole or a small black spider pan.
