Squash Casserole

Ingredients

  • 3/4 c. sour cream
  • 3 eggs, beaten well
  • 1 c. chopped pecans
  • salt and pepper to taste
  • 1/2 packet Hidden Valley Ranch dressing
  • 1 to 1 1/2 c. grated Cheddar cheese (may use Swiss and Cheddar)
  • 1/2 large onion, diced and sauteed (optional)
  • 1 clove garlic or garlic powder to taste (optional)
  • 1 c. breadcrumbs (may add a little more if desired) or approximately 12 saltines, crushed
  • 1/2 lb. sausage, cooked and well drained or 1/2 lb. Italian sausage, kielbasa, ham or bacon
  • 6 to 8 squash, cut into 1-inch pieces, cooked and smashed (squash must be well drained, use a colander)

Directions

    Mix all ingredients together and pour into a buttered casserole.

    Bake at 350° for 40 minutes.
