- 3 c. squash, cooked and drained
- 1 small onion, chopped
- 1 large bell pepper
- 1/2 can celery soup
- 1/2 can chopped celery
- 1 c. cracker crumbs
- 1 c. grated cheese
- 2 eggs, beaten
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 stick oleo
Directions

1Parboil squash until tender.

2Saute onion, celery and pepper in oleo.

3Add squash to this.

4Add eggs and cream of celery soup. Mix with cracker crumbs.

5Place in casserole and bake at 350° for 25 minutes, then add grated cheese on top and return to oven for 8 minutes longer.
