Squash Casserole

Ingredients

  • 2 lb. cooked squash (either summer, yellow or zucchini)
  • 3 Tbsp. chopped onion
  • 1 c. grated cheese
  • 2 eggs
  • 1/2 c. butter
  • 1/2 c. milk
  • salt and pepper
  • 1 c. saltine cracker crumbs

Directions

    Cook squash and onions in small amount of water until soft. Drain.

    Mash squash and add butter and beaten eggs.

    Mix well, then add crumbs and milk and blend thoroughly.
  4. 4
    Add some of the cheese and mix in salt and pepper to taste.
