- 2 lb. squash, sliced
- 1 small onion
- salt and pepper to taste
- 1 Tbsp. butter, melted
- 1/2 c. melted butter
- 1 can chicken soup, undiluted
- 1 c. (8 oz.) sour cream
- 2 Tbsp. chopped pimento
- 1 pkg. (8 oz.) seasoned stuffing mix
Directions

1Cook squash and onions tender in a very small amount of boiling salted water.

2Drain.

3Season with salt and pepper and one tablespoon butter.

4Stir in chicken soup, sour cream and pimento until well blended.

5Combine half of stuffing mix and squash mixture.

6Spoon into a 2-quart buttered casserole dish.

7Top with remaining stuffing mix.

8Bake at 375° for 30 minutes.

9Serves 6.
