Squash Casserole

  • 1 lb. (2 c.) squash
  • 1 tsp. sugar
  • 1 egg
  • 1/2 stick butter
  • 1/2 c. mayonnaise
  • 1/2 c. chopped onion
  • 1 c. grated cheese
  • salt and pepper to taste

Directions

    Cook squash until tender, then drain and mash.

    Mix sugar, mayonnaise, onion, eggs, salt and pepper together and combine with squash.

    Place in buttered casserole dish and top with cracker crumbs, grated cheese and 1/2 stick butter.

    Bake in 350° oven for 25 to 40 minutes.
