Squash Casserole

Ingredients

  • 3 good-sized squash
  • 1 onion, chopped
  • 1 can cream of mushroom soup
  • 2 Tbsp. oleo
  • 1 egg, slightly beaten
  • 1 box Stove Top stuffing
  • 2 c. shredded cheese
  • poultry seasoning to taste (optional)

Directions

    Cook squash until tender; drain.

    Saute onion in oleo until tender.

    Mix squash, onion, soup, egg, and Stove Top stuffing and 1/2 of cheese.

    Pour into a greased casserole dish and bake at 350° about 30 to 35 minutes.

    The last 5 minutes, sprinkle rest of cheese on top and let cheese melt.
