Squash Casserole

Ingredients

  • 2 lb. zucchini or summer squash or both
  • 1/2 c. chopped onion
  • 1 can cream of mushroom soup
  • 1 c. sour cream
  • 1 (8 oz.) pkg. herb seasoned stuffing
  • 1/2 c. butter or margarine
  • 1/2 small Velveeta loaf or more if you want a cheesy taste (optional)

Directions

    Cook squash and onion in salted water for 5 minutes; drain. Mix soup and sour cream (and cheese, if using). Mix in squash and onion.

    Cook stuffing in butter.

    Spread stuffing on bottom of baking dish.

    (Save some stuffing for top.)

    Spoon squash mixture over stuffing.

    Add remaining stuffing over top.

    Bake at 350° for 30 minutes.

    Serves 6.
