  • 6 medium sized yellow squash
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1/2 c. milk
  • 1 can cream of mushroom soup
  • 1/2 c. chopped onion
  • 1/4 c. green pepper (optional)
  • 1 c. grated cheese
  • crushed saltines

Directions

    Combine all ingredients except saltines and 1/2 cup cheese. Pour into buttered casserole dish.

    Sprinkle with cracker crumbs and reserved cheese.

    Bake, uncovered, at 350° for 30 minutes or until done.

    Freezes well.
