Ingredients
- 2 lb. any squash cubed (approximately 6 c.)
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- 1 c. sour cream
- 1 c. shredded carrot
- 1 (8 oz.) pkg. herb stuffing mix (Arnold's)
- 1/2 c. melted butter
Directions

1In saucepan, cook sliced squash and onion in boiling salted water for 5 minutes; drain.

2Combine cream of mushroom soup and sour cream in small bowl and add to drained squash.

3Stir in shredded carrot.

4Combine stuffing mix with melted butter and spread half of stuffing mix in bottom of 12 x 7 1/2 x 2-inch baking dish.

5Spoon vegetable mixture on top.

6Sprinkle remaining stuffing over top of vegetables.

7Bake in 350° oven for 25 to 30 minutes.

8Makes 6 to 8 servings.
