- 4 medium size squash
- 1/3 c. chopped onions
- 1/3 c. melted margarine
- 2 hard-cooked eggs, chopped up
- 1/2 c. cubed Cheddar cheese
- 1 c. corn chips, crushed
Directions

1Cook squash in small amount of water until tender.

2Drain. Salt to taste.

3Saute onions in butter and add squash.

4Stir. Spoon mixture into lightly greased 1-quart casserole.

5Top with eggs, cheese and corn chips.

6Bake at 350° for 15 minutes or until cheese is melted.

7Yields 4 servings.
