  • 1 1/2 lb. cooked and seasoned squash
  • 1 small jar chopped pimento
  • 1 can cream of chicken soup
  • 2 small onions, diced
  • 1 c. sour cream
  • 4 small carrots, grated fine
  • 1 pkg. Pepperidge Farm stuffing mix
  • 1 stick butter

Directions

    Mix squash, soup, onions, sour cream, carrots, pimento and 1/2 package herb stuffing mix.

    Melt butter and stir in remainder of herb stuffing mix.

    Line dish with stuffing crumb mixture holding back part of crumbs to sprinkle on top.

    Bake about 30 minutes at 325°.
