Squash Casserole

  • 3 lb. yellow squash
  • 1 stick butter
  • 1 small onion, finely chopped
  • 2 eggs, well beaten
  • 1 Tbsp. sugar
  • 1 c. grated Cheddar cheese

Directions

    Boil squash and onion until well done; season to taste. Drain and mash. Add 1/2 stick butter, 1/2 cup crackers, eggs and sugar. Place in baking dish. Melt remaining butter; pour over casserole then add rest of crackers. Bake at 350° for 20 minutes. Add cheese and bake an additional 5 minutes, until cheese is melted.
