  • 4 to 6 yellow squash
  • 4 to 6 zucchini squash
  • 8 oz. sour cream
  • 2 carrots, grated
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 box Stove Top stuffing
  • 1 stick butter

Directions

    Slice squash and cook in water; drain and mash.

    Mix next 4 ingredients into squash.

    Prepare stuffing mix according to directions on box, except use 1 stick butter instead of 1/2 stick. Mix stuffing into squash mixture.

    Bake at 350° for 45 minutes. Makes 13 x 9 x 2-inch pan.
