Squash Casserole

  • 1 1/2 lb. squash
  • 1 lb. ground sausage (large Jimmy Dean, mild)
  • 1 large onion
  • 16 oz. sour cream
  • 2 eggs
  • 2 c. grated Cheddar cheese
  • 1 pkg. Pepperidge Farm herb dressing
  • salt and pepper to taste

Directions

    Slice and boil squash; drain.

    Brown sausage and drain. Combine squash with all ingredients.

    Add herb dressing last. (Add slowly until all ingredients are moist.)

    Pour into greased casserole and bake at 350° for 30 to 45 minutes or until puffy on top.
