- 1 lb. summer squash
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped bell pepper
- 1/2 stick oleo
- 1 Tbsp. sugar
- 1 beaten egg
- 1 (4 oz.) can sliced water chestnuts, drained
- Parmesan cheese
- Cheddar cheese, grated
- 1 tsp. salt
- 1/2 tsp. black pepper
Directions

1Slice squash; boil 5 minutes in small amount of salted water. In a large skillet; saute onion, celery and pepper in oleo until clear.

2Add squash; saute 2 minutes longer.

3Add egg, sugar and chestnuts.
