Ingredients

  • 1 lb. summer squash
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/2 c. chopped bell pepper
  • 1/2 stick oleo
  • 1 Tbsp. sugar
  • 1 beaten egg
  • 1 (4 oz.) can sliced water chestnuts, drained
  • Parmesan cheese
  • Cheddar cheese, grated
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions

    Slice squash; boil 5 minutes in small amount of salted water. In a large skillet; saute onion, celery and pepper in oleo until clear.

    Add squash; saute 2 minutes longer.

    Add egg, sugar and chestnuts.
