Squash Casserole

Ingredients

  • 3 Tbsp. margarine
  • 2 lb. squash, diced
  • 1 onion, chopped
  • 1 egg
  • 1 can cream of mushroom soup
  • 1/2 c. milk
  • 1 c. cheese, grated
  • 1 c. cracker crumbs, melted with margarine
  • 1 small bell pepper, chopped
  • salt and pepper to taste

Directions

    Saute onion in margarine.

    Add squash and cook until tender. Add all other ingredients except cracker crumbs.

    Pour in casserole dish.

    Top with cracker crumbs, that are mixed with margarine.

    Bake at 350° for 30 minutes or until brown on top.
