Squash Casserole *

Ingredients

  • 2 lb. yellow squash
  • 1 large onion, chopped
  • 1 c. sharp Cheddar cheese, grated
  • 3 eggs
  • 1/2 stick margarine and 1/2 c. sour cream or 1 stick margarine
  • 1/2 tsp. salt or garlic salt
  • 1/2 tsp. black pepper
  • 1 c. buttered bread crumbs
  • 1 can cream of chicken soup
  • 1/2 c. milk

Directions

    Stew squash and onion, mash fine.

    Add eggs and other ingredients, reserving portion of cheese and bread crumbs for topping.

    Mix well and pour into greased casserole.

    Bake at 350° for 45 minutes.
