Squash Casserole

- 6 c. zucchini or yellow summer squash, sliced
- 1/4 c. chopped onion
- 1 can cream of mushroom soup
- 1 1/2 c. milk
- 1 c. sour cream
- 1 c. shredded carrots
- 1 (8 oz.) pkg. seasoned stuffing mix
- 1/2 c. butter, melted
Directions

1In saucepan or microwave, cook sliced squash and chopped onion in small amount of water until partially cooked.

2Drain.

3Combine soup, milk and sour cream.

4Add carrots, onion and squash. Combine stuffing mix and butter.

5Spread most of stuffing mix in 9 x 13-inch pan.

6Spoon squash mixture on top.

7Sprinkle remaining stuffing mix over top.

8Bake at 350° for 30 to 45 minutes.

9(If vegetable mixture seems dry, add more milk.

10The stuffing mix will absorb excess moisture.)
