- 7 to 8 medium squash
- 3/4 c. diced onions
- 1 egg
- 2 Tbsp. mayonnaise
- 2 Tbsp. sugar
- salt and pepper
- 2 Tbsp. butter
- 1 1/2 c. Cheddar cheese
- Ritz crackers, crushed (enough to cover casserole)
Directions

1Wash and cut squash in 2-inch pieces.

2Dice onions.

3Put both in large pan with water to cover the vegetables; salt and pepper. Boil until soft.

4Drain water and mash squash and onions; let cool. Add egg, mayonnaise, sugar, salt and pepper.

5Put in casserole dish and cover with shredded cheese and Ritz crackers.

6Drizzle with butter.

7Bake at 350° for 30 minutes.
