  • 3 c. cooked squash
  • 1 Tbsp. oil
  • 1 c. cheese
  • 6 saltine crackers
  • salt and pepper to taste
  • 1 medium onion
  • 1 Tbsp. margarine
  • 1 can cream of mushroom soup
  • 2 eggs

Directions

    Drain cooked squash and onion well. Beat with mixer.

    Add all additional ingredients and beat again.

    Pour into a greased 3-quart casserole dish and bake 1 hour at 400°.

    Serves 8.
