Squash Casserole

Ingredients

  • 2 c. sliced yellow squash
  • 1 medium onion, sliced or chopped
  • 1/2 stick margarine
  • 3/4 c. water
  • 2 c. Ritz cracker crumbs or toasted bread crumbs
  • 1 can cream of mushroom soup
  • 1/4 c. milk or water

Directions

    Combine first 4 ingredients and cook until vegetables are tender, about 10 minutes.

    I use a 6 1/2 x 8-inch baking dish, well-greased.

    Alternate layers of squash and crumbs until all ingredients are used, finishing with crumbs on top.

    Pour mushroom soup over.

    Rinse can with 1/4 cup milk or water and bake at 350° for 25 minutes.

    Serve hot.
