- 5 to 6 yellow squash
- 3 Tbsp. pimento
- 3 Tbsp. onion
- 3 Tbsp. melted butter
- salt and pepper
- 1 c. diced medium sharp cheese
- 1 c. cracker crumbs
- 2 eggs, well beaten
- 1 c. milk, scalded
Directions

1Cook squash until tender.

2Mash with fork (need 2 cups). Preheat oven to 350°.

3Combine squash, cheese, pimento, onion and cracker crumbs.

4Mix well.

5Heat milk to boiling, allow to cool slightly, then stir into mixture.

6Pour in buttered casserole dish.

7Bake 1 hour at 350°.
