Squash Casserole

Ingredients

  • 5 to 6 yellow squash
  • 3 Tbsp. pimento
  • 3 Tbsp. onion
  • 3 Tbsp. melted butter
  • salt and pepper
  • 1 c. diced medium sharp cheese
  • 1 c. cracker crumbs
  • 2 eggs, well beaten
  • 1 c. milk, scalded

    Cook squash until tender.

    Mash with fork (need 2 cups). Preheat oven to 350°.

    Combine squash, cheese, pimento, onion and cracker crumbs.

    Mix well.

    Heat milk to boiling, allow to cool slightly, then stir into mixture.

    Pour in buttered casserole dish.

    Bake 1 hour at 350°.
