- 1 medium or large butternut squash
- 1/2 c. butter, softened
- 3 eggs, well beaten
- 1 small can crushed pineapple, drained
- 1/2 c. evaporated milk
- 1 c. brown sugar
- 2 Tbsp. bourbon
- 1 c. black walnuts, chopped (optional)
Directions

1Peel squash and cut into chunks.

2Place in water; cover and cook until tender. In mixing bowl, mix butter, eggs and squash; beat thoroughly.

3Add pineapple, evaporated milk, brown sugar, bourbon and walnuts.

4Pour into casserole or small individual oven dishes.

5Bake at 325° for 15 minutes.
