Squash Casserole

Ingredients

  • 1 medium or large butternut squash
  • 1/2 c. butter, softened
  • 3 eggs, well beaten
  • 1 small can crushed pineapple, drained
  • 1/2 c. evaporated milk
  • 1 c. brown sugar
  • 2 Tbsp. bourbon
  • 1 c. black walnuts, chopped (optional)

Directions

    Peel squash and cut into chunks.

    Place in water; cover and cook until tender. In mixing bowl, mix butter, eggs and squash; beat thoroughly.

    Add pineapple, evaporated milk, brown sugar, bourbon and walnuts.

    Pour into casserole or small individual oven dishes.

    Bake at 325° for 15 minutes.
