  • 1 qt. fresh yellow squash
  • 1 medium onion, chopped
  • 1 c. Ritz wheat crackers, crushed (save 1/4 c.)
  • 1/2 c. shredded Cheddar cheese
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 6 Tbsp. margarine, divided

Directions

    Cook squash and onion in a small amount of salted water until tender; drain. Add cracker crumbs (reserving 1/4 cup for top), cheese, eggs, salt, pepper and 3 tablespoons margarine. Spoon into a greased casserole dish (2-quart). Top with remaining cracker crumbs and margarine. Bake at 350° for 15 minutes or until brown. Yields about 8 servings.
