Squash Casserole

Ingredients

  • 4 c. yellow squash, cooked almost done
  • 1 medium onion, chopped
  • 1 grated carrot
  • 1/2 c. sour cream
  • 1 can cream of mushroom soup
  • 1 stick butter
  • 1 stack Ritz crackers

Directions

    Melt butter and pour over crushed Ritz crackers.

    Mix well and put about 1/2 in bottom of a Pyrex dish appproximately 6 x 13 x 2-inches.

    Mix other ingredients together and pour on top of crackers.

    Sprinkle remaining cracker mixture on top and bake at 325° for 30 to 40 minutes or until lightly browned.
