Squash Casserole

Ingredients

  • 1 lb. squash
  • 1/2 c. mayonnaise
  • 1/4 c. bell pepper, chopped
  • 1 egg
  • 1/2 c. chopped pimento (1 small jar)
  • 1/2 stick margarine or butter
  • 1 tsp. sugar
  • 1/2 c. chopped onion (or less)
  • 1/2 c. chopped pecans
  • 1/2 c. grated cheese
  • salt and pepper to taste
  • 1/2 c. or more cracker crumbs

Directions

    Cook squash until tender.

    Drain, mash and mix with other ingredients.

    Pour into casserole dish.

    Top with crumbs.

    Dot with margarine.

    Bake at 350° for 35 minutes or until browned.
