- 6 c. yellow squash
- 1/4 c. chopped onion
- 1 c. cream of mushroom soup
- 8 oz. sour cream
- 1 c. shredded carrots
- 8 oz. pkg. seasoned stuffing mix
- 1/2 c. melted butter
- salt and pepper
Directions

1Boil squash and onion until tender.

2Combine soup, sour cream and carrots.

3Fold in cooked squash.

4Mix stuffing mix with butter.

5Spread 1/2 crumb mixture into bottom of casserole.

6Pour squash mixture over, then top with remaining crumbs.

7Bake, uncovered, at 350° for 25 to 30 minutes.
