Squash Casserole

  • 1 lb. yellow squash (3 c.)
  • 1/2 pt. sour cream
  • 1 can cream of chicken soup
  • 4 small carrots, grated
  • 2 small onions, finely chopped
  • 2 oz. jar chopped pimientos
  • 1 pkg. Pepperidge Farm herb seasoned stuffing
  • 1 stick margarine, melted

Directions

    Cook squash in small amount of salted water; drain and mash. Mix with next five ingredients and 1/2 package of stuffing.

    Take other half of stuffing mix and blend with margarine.

    Sprinkle over top of casserole and bake in 350° oven for 30 minutes.
