- 1 lb. yellow squash (3 c.)
- 1/2 pt. sour cream
- 1 can cream of chicken soup
- 4 small carrots, grated
- 2 small onions, finely chopped
- 2 oz. jar chopped pimientos
- 1 pkg. Pepperidge Farm herb seasoned stuffing
- 1 stick margarine, melted
Directions

1Cook squash in small amount of salted water; drain and mash. Mix with next five ingredients and 1/2 package of stuffing.

2Take other half of stuffing mix and blend with margarine.

3Sprinkle over top of casserole and bake in 350° oven for 30 minutes.
