  • -3 lbs yellow squash, sliced
  • -1/2 C chopped onion
  • -1 C shredded sharp cheddar cheese
  • -2 eggs, lightly beaten
  • -1/4 C mayonnaise
  • -2 t sugar
  • -1 t salt
  • -Ritz crackers, crushed

Directions

    1. Boil squash and onion (until slightly tender), drain and place in baking dish

    2. In a separate bowl, combine cheese, eggs, mayonnaise, sugar and salt, then pour over squash

    3. Crumble crackers on top, then top with pats of butter

    4. Bake at 375° for 15-20 minutes
