- 2 pounds Squash, Sliced Thin (yellow & Zucchini)
- 2 cups Onions, Chopped
- 1 box Chicken Stuffing Mix (with Seasoning Packet)
- 1/2 cups Butter, Melted
- 1 cup Sour Cream
- 1 cup Carrots, Grated
- 1 cup Cream Of Chicken Soup
- 1 cup Water
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
Directions

1Combine squash and onion with water and cook for five minutes; drain. In a bowl, put stuffing and seasoning packet; mix with melted butter. In another bowl, add squash, sour cream, carrots, soup, salt and pepper, and stir. Add all but 1/2 cup of stuffing.

2Place in a lightly greased casserole dish and top with remaining 1/2 cup stuffing crumbs.

3Bake at 350 degrees for 30 to 40 minutes.
