  • 2 pounds Squash, Sliced Thin (yellow & Zucchini)
  • 2 cups Onions, Chopped
  • 1 box Chicken Stuffing Mix (with Seasoning Packet)
  • 1/2 cups Butter, Melted
  • 1 cup Sour Cream
  • 1 cup Carrots, Grated
  • 1 cup Cream Of Chicken Soup
  • 1 cup Water
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper

Directions

    Combine squash and onion with water and cook for five minutes; drain. In a bowl, put stuffing and seasoning packet; mix with melted butter. In another bowl, add squash, sour cream, carrots, soup, salt and pepper, and stir. Add all but 1/2 cup of stuffing.

    Place in a lightly greased casserole dish and top with remaining 1/2 cup stuffing crumbs.

    Bake at 350 degrees for 30 to 40 minutes.
