  • 1 lb squash (sliced in rounds or chopped)
  • 1 small onion, chopped
  • 1 tsp minced garlic
  • 2 large eggs (beaten)
  • 1/2 cup bread crumbs
  • 1/2 cup shredded cheese
  • 1 salt (to taste)
  • 1 black pepper (to taste)

    Boil until squash is tender using just enough water to cover ingredients then drain and put in a medium-sized bowl

    Stir all ingredients and pour into 8x8 casserole dish.

    Optional - Sprinkle bread crumbs and shredded cheese on top of casserole.

    Bake 30 minutes at 345F.
