Squash Casserole

Ingredients

  • 4 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 1 egg
  • 1/2 stick margarine
  • 1 c. sharp Cheddar cheese
  • 1/4 c. milk
  • 1 c. crushed saltines
  • salt and pepper to taste

Directions

    Combine squash and onion in saucepan with small amount of water.

    Cook until tender. Drain.

    Add remaining ingredients and pour into greased casserole dish.

    Top with some crumbled crackers and grated Cheddar cheese.

    Bake in 350° oven for approximately 35 minutes until top is brown.

    Makes 6 servings.
