  • 2 1/2 c. sour cream, well drained
  • 1 large summer squash, sliced
  • 1 large zucchini, sliced
  • 2 Tbsp. fresh parsley/basil mix
  • 1 sliced onion
  • 3/4 c. bread crumbs
  • 1/2 c. grated Swiss cheese
  • 1/2 c. grated Parmesan cheese
  • 1/4 c. melted butter

Directions

    In 400° oven, cook slices of squash and zucchini on a baking sheet for 10 minutes.

    Decrease oven temperature to 350°.

    Mix squash, onion and herbs in a bowl, then layer mix in a large casserole dish with sour cream and cheeses.

    Mix bread crumbs with butter and sprinkle on top.

    Bake 45 minutes to one hour.
