Squash Casserole

  • 2 lb. squash, cooked
  • 3 Tbsp. onions, chopped
  • 1 c. grated cheese
  • 1 c. saltine crackers, crushed
  • 2 eggs
  • 1/2 c. milk
  • 1/2 c. butter
  • salt and pepper to taste

Directions

    Mash squash up.

    Add eggs, 1/2 cup crackers, 1/4 cup butter, milk, onions, cheese, salt and pepper.

    Mix well.

    Pour into casserole and top with 1/4 cup melted butter.

    Sprinkle 1/2 cup crackers on top.

    Bake at 350° for 1 hour or until brown around edges.

    You may garnish with cheese, if desired.
