Squash Casserole

Ingredients

  • 3 c. yellow squash, sliced
  • 1 medium onion, sliced
  • 1/2 c. green pepper, sliced
  • 1/2 tsp. salt
  • 1 qt. water
  • 3 eggs
  • 1 c. sharp cheese, shredded
  • 12 saltine crackers, crushed
  • 1 stick butter, melted

Directions

    Cook in large pot the sliced squash, onion and green pepper in salted water until tender.

    Drain off liquid but save.

    Put 1/2 cup of liquid in a buttered casserole dish.
  4. 4
    Beat eggs and mix with shredded cheese.

    Pour over top of squash.

    Sprinkle crushed crackers over squash.

    Pour melted butter on top.

    Bake at 350° until brown.
