- 3 c. yellow squash, sliced
- 1 medium onion, sliced
- 1/2 c. green pepper, sliced
- 1/2 tsp. salt
- 1 qt. water
- 3 eggs
- 1 c. sharp cheese, shredded
- 12 saltine crackers, crushed
- 1 stick butter, melted
Directions

1Cook in large pot the sliced squash, onion and green pepper in salted water until tender.

2Drain off liquid but save.

3Put 1/2 cup of liquid in a buttered casserole dish.

4Beat eggs and mix with shredded cheese.

5Pour over top of squash.

6Sprinkle crushed crackers over squash.

7Pour melted butter on top.

8Bake at 350° until brown.
