Squash Casserole

  • 2 lb. squash, diced
  • 1 large onion, chopped
  • 2 eggs
  • 3/4 stick margarine, melted
  • 1/2 c. milk
  • 2 Tbsp. brown sugar
  • 1 tsp. salt
  • 2 1/2 c. bread, torn into small pieces
  • 1 1/2 c. sharp cheese, grated

Directions

    Cook squash and onion.

    Drain well.

    In bowl, beat eggs and add remaining ingredients, except bread and cheese.

    In buttered 2-quart shallow casserole dish, layer bread, squash and cheese. Repeat each layer.

    Top with remaining bread.

    Dot with butter. Bake, uncovered, at 350° for 45 minutes.
