Squash Casserole

Ingredients
- 1 lb. yellow summer squash
- 1 large onion, chopped
- 1 pkg. herbed stuffing mix
- 1 (8 oz.) carton sour cream
- 1 can cream of chicken soup
- 1 small jar pimento
- 1 Tbsp. sugar
- salt and pepper to taste
- 1 stick margarine
- 1 carrot, grated (optional)
Directions

1Cook squash and onion until tender; drain.

2Add salt, pepper and sugar. Add 1/2 package of stuffing mix, sour cream, soup, grated carrot and pimento.

3Mix well.

4In 9 x 13-inch Pyrex casserole dish, melt stick of margarine.

5Remove from oven and pour in remaining bag of stuffing mix and mix with margarine until damp.

6Reserve half of stuffing.

7Pour first mixture (squash) over crumb mixture, spread until smooth and top with remaining crumbs. Cover with foil and bake at 350° for 30 minutes.
